BBQ'in' at the Kennewells

We throw all sorts of stuff on the barbie including burger patties, little cherry bomb chili's and slabs of Otaru cherry wood smoked bacon.

I'm quick to sandwich a burger patty and a slab of bacon between some bread and hold a cherry bomb in the other hand and alternate bites ....

Luckily I'm armed with some other implements in my pocket, which make for multi-tasking a breeze ..

and picking at the eggplants sizzling away with soy, negi and mayo is quite a treat!

Where the magic happens

After our visit to the amazing Otaru brewery, and a quick stop at LeTao chocolate shops, we seem to be finishing up the perfect day at Mercado, where the amazing Otaru Cherry-wood smoked bacon magic happens.

This is the bacon we use throughout J-Sekka, which is just so strongly flavored with the Cherry wood, and definitely the greatest bacon in the world, without question! ;)

We were blessed with the opportunity to today visit Mr. Bacon and his wife and see how it all happened. As the story goes, he went to Spain / France and fell in love with the food, especially the bacon. He wanted to bring that back to Japan ... Mercado used to be a little restaurant that he started producing bacon for, but the bacon proved to be more popular than the restaurant, which is when he changed paths.

He turned the quaint little space into a bacon producing machine, but ran into one small glitch ... having a big enough space to classify as a production kitchen and seal his products. But upon reading through the details carefully, the required space was in cubic meters, not square meters. So immediately the top story floor was knocked out, and, ta da, here you have Japan's smallest, but tallest, production room. So clever!

But it's no problem to smoke the bacon under the side stairs ... hehe

Hello old friend

Over the years shops come and go for all sorts of reasons, luckily Ricky's has and is still there for us. Located on Pra Arthit off the back of Bunglumphu, Ricky's has been knocking up great baguettes out the faux chinese coffee shop for years.

They have been there for us when we just needed some farang food, they have been there for us when we've been drinking for far to long and need a solid stomach liner, they have been there well... always, except for the brief moment when we came back to the shop and stood horrified at the closed down front for a few seconds be for relising they had just moved next door (be still my racing heart).
The drinks are good the staff friendly but what brings us back time after time is the crusty baguette stuffed with bacon lettuce, tomato and blue cheese or feta if we're feel a little daring and topped with slice green olives and dried oregano. It is and will always be a winner in sandwich circles.

Birthday piggin. Samui

Anyway where were we? Oh yeah back in Samui it was our friend Mike's birthday. We decided there could be no better way to celebrate such an occasion than to sacrifice a small animal, and so a plan was formed. We made calls and we found the specialist we were after, satisfied he could deliver further calls were made to inform all of our intentions. And so the day of celebration arrived, we began the morning with a trip to the markets to buy a few ingredients for the dishes we were contributing to the day - bbq'ed asparagus with a sherry bacon vinaigrette and grilled wild mushrooms wrapped in banana leaf with chilli and Thai basil. After some quick prep work it was onto the scooter and off to the other side of the island where the soiree was taking place.


After arriving at Glen and Kellys place and a quick drink we finished up our prep and awaited the arrival of the guest of honor...oh and Mike. Without warning it arrived, set on a long wooden plank and wrapped in butchers paper,

we all so desperately wanted to peel back the paper and take a peek but without the birthday boy all we could do was wait and anticipate. You know the saying idle hands, well ours soon set to work with a marker turning present into card with a few budding artists amongst us adding some final flourishes.

Finally Mike arrives not only to our relief but also the trio of dogs who were patiently guarding the aromatic parcel sitting on the table.

With Mike here it was all on, first the unwrapping of the present, paper was torn away to first reveal a golden brown snout followed by two crispy ears and down a superbly crackalicious body to the curly tail.

Asparagus and mushrooms were put onto the bbq followed by corn, twice baked potato's and deviled eggs prepared by the insanely energetic Vern, Jess and co as well as Kel's mad coleslaw and fresh bread rolls from down the road.

The pig was amazing, the chef had deboned the beastie before rubbing the inside with Thai spices and then building a wooden frame to hold the shape as it roasted.

There was much feasting and drinking, then games with more drinking and silly hats as well as some impromptu magic, some more drinking and then some drink fueled eating, a good time was had by all.

Asparagus with sherry bacon vinaigrette (adapted from webers book of grilling)

It's a pretty loose recipe. Make with quantities suited to your taste.


Take some bacon and dice fairly finely, saute over a med low heat so the fat renders out of the bacon, don't rush it and cook until the bacon is golden and crispy.

Strain the bacon and return the fat to the pan.

Add diced garlic to the fat and saute until golden, at the end of sauteing the garlic throw in some picked thyme leaves for a few seconds to release the flavor and aroma.

Strain the garlic and thyme and add to the bacon. Keep the fat.

Whisk the bacon fat into some sherry vinegar until you have a loose dressing add the fried bacon, garlic and thyme then season.

Pour over freshly grilled asparagus or broccoli rabe.

Another simple one. Again quantities to taste.


Take a sheet of banana leaf and quickly run over an open flame, you will see as the leaf changes shades of green. This makes the leaf pliable and more giving as it is folded.

Onto the leaf add a handful of mixed mushrooms, some crushed garlic cloves, roast chilli powder, sliced shallot, a good handful of Thai basil and a squeeze of lime.

Fold the leaf around the mushrooms and secure with a couple of toothpicks if your not quite up to the leaf folding you can then wrap the leaf wrapped mushrooms in a sheet of al foil, you'll still get the leaf aroma in the mushrooms.

Place the package on the grill and cook. Unwrap at the table to get the full spectrum aromas.

Possibilities are endless ...

We’re back at Graubunden. But their sandwiches are that good! And with so many filling combinations and 4 types of bread’s to choose from the possibilities are endless…

Today Kim has a mushroom omlette on soft baguette. It’s a thick omlette filled with a range of delicious Japanese mushrooms, nicely seasoned and still a little soft in the centre. There’s a thin smear of tomato ketchup and melted cheese all incased in a gorgeous soft baguette.

I have a toasted bagel with bacon, tomato and cream cheese. The bagel is lightly toasted and slathered with butter. Then there’s the generous slices of grilled bacon, a big dollop of cream cheese and a few slices of tomato. It’s seasoned nicely with cracked pepper and the crisp fresh vegetables, kewpie mayonnaise and potato salad to the side are spot on.

To accompany our sandwiches we both can’t resist a maple au lait. A cold shaken milk sweetened just so with Canadian maple. Mmmm.

It’s always daunting … with each visit we take turns in tackling the enormous task of choosing just one sweet to share from the display cabinet. This time I choose a chocolate, cream & banana dome. The triumphant slice arrives, there are layers of soft sponge, chocolate, fresh cream and banana. It’s delicious!

Of course we both have a delicious hot cocoa. It’s Van Houten cocoa with hot milk. Then there’s a big spoon of fresh whipped cream and freshly grated cinnamon to top it off. I even pose for a very-Japanese photo moment, with my hot chocolate.

Graubünden, Hirafu East Village

Living in a strange land is exciting and well, a bit strange sometimes. Sometimes you can end up longing for a little taste from your memories unable to find a cure. And so it is with Japan, within minutes you can always be snacking on delicious sushi, ramen, soba and the like, but, it can take quite a bit of effort to get a good sandwich (especially not one made of the ubiquitous should-be-a-dessert sweet bread). To our delight located within a brief five minute walk of our house, named after a region of Switzerland, it’s a cute little brick house all warm and cosy inside.

The menu is the famous sandwich (seriously, people drive two hours just to come for one) Once you finally make a filling choice you then have further agony deciding the type of bread; baguette, soft baguette, rye bread, or bagel all baked by the fantastic White Rock bakery in Kutchan so you know it’s going to be the real deal.

Today I go for the Graubünden original, omelette with bacon egg and cheese on rye.

In the brief wait we take the time to look around, there’s a showcase filled with fantastic cakes and a small shop selling herbal teas, cookies, candles and a good range of organic oats, maple syrup and other gourmet treats.

The sandos arrive and they are every bit as good as they sounded, the rye cut thick, the filling fresh and generous, mine full of just cooked omelette, grilled bacon and melty cheese is the perfect breakfast as far as I’m concerned and Kat’s piled high with chicken and slathered with cream cheese is a classic classic, on the side of each cute as a button cherry tomatoes a few sticks of cucumber a little carrot salad and a good blob of mayo with a potato salad, whipped to make it creamy.

Seeing we’ve being making eyes at the cakes a massive slice of banoffee pie is soon organised, and again it’s as delicious as it looks and prompts yet another fork duel (chivalry smivalry).

How does that song go? The one about the weather outside being frightful but inside delightful? That’s how I feel sitting here in Graubunden, content and relaxed and toasty, I don’t want to leave…..I think we have time and room for a maple hot milk.

Libernard Cafe, Chiang Mai

Lonely Planet says that the best banana pancakes come from Apples in Kanchanaburi but we beg to differ... Been to Apples and it's ok, bit to many laurels being rested on frankly, now Libernard from the first time we supped, through the years till now has never wavered in the pancake department. First off there's the choice between regular and wholemeal, the wholemeal is a great day starter if you have a lot planned and doesn't sacrifice on flavor for being in the healthy region of food stuffs.

Usually we opt for the regular banana with a side of bacon. The order comes fluffy and light filled with banana, the bacon is always crispy and there's a choice of honey or syrup on the table. As well as being able to partake of the finest banana pancakes in Thailand there's the bonus of being able to drink some mighty fine coffee, brought down from the mountains by hill tribe people it is roasted on premise giving you a quality cup that is seldom tasted any where else.

And to top it all off the resident cat is oh so cute, affectionate, and able to melt hearts with a single glance of her big yellow eyes.

It's really just such a pleasant way to start your day, we try to do it often every time we're in Chiang Mai.
